Hydrosol is the aromatic water that remains after steam-distilling or hydro-distilling plant matter. It is produced during the same distillation process that also extracts the essential oils. Distillation is a process that exposes plants to boiling water, steam, or both. The steam opens the structure of the plant which allows the oil to be released. The water extracts the essence of all that was living and growing in the plant. After the distillation process is finished, the essential oil separates and sits on top of the hydrosol.
